Getting to Know Nikki Satterfield, Orthodontic Assistant at Sawrie Orthodontics 

Nikki Satterfield joined the Sawrie Orthodontics team in October 2018.

She brings over 11 years of orthodontic experience, along with her bright smile and fun demeanor! 

Nikki works second in line to Lori Otting, Clinical Supervisor, helping to manage the inventory and ordering for the office. 

 

Additionally, she puts in prescriptions and manages orders for our Invisalign and 3M Aligners patients.

Nikki also does scans with the 3D printer and helps in the lab with retainers.

She loves to work with patients on bandings, debandings and adjustments.

 

 

She is also cross-trained to help at the front desk when needed.

Nikki is such a great team player and asset to everyone at Sawrie Orthodontics. 

"I absolutely love working here because we are one big, happy family... it's great that it's not a corporate environment and Dr. Daniel really cares about the patients, the practice and his employees. He takes the time to get to know his patients and give individualized attention and care. By not being a big corporate office, the quality of care far exceeds what other offices offer and I truly am happy to come to work every day," Nikki explains. 
"I just can't say enough good things about my co-workers and Dr. Daniel. He is hilarious and makes work fun. I also love that I get to work with one of my best friends, Jana Townson. We worked together prior to coming here and it's just the best thing to be a part of this team, with Jana by my side," Nikki says. 

Nikki and her husband, Caleb, reside in Dalton, Georgia.

She is a huge animal advocate and loves all things Halloween!

Nikki also enjoys the fun events Sawrie Orthodontics participates in throughout the year.  


 

"The Cookies with Santa event and Chattanooga Mom's Blog event at the Zoo were so fun. I can't wait to be a part of the Trunk or Treat event we will do at a local elementary school this fall!" Nikki exclaims.

Ribbon Salad with Orange Vinaigrette

Ingredients

  • 1 medium zucchini
  • 1 medium cucumber
  • 1 medium carrot
  • 3 medium oranges
  • 3 cups fresh baby spinach
  • 4 green onions, finely chopped
  • 1/2 cup chopped walnuts
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup golden raisins, optional

    VINAIGRETTE:
  • 1/4 cup olive oil
  • 4 teaspoons white wine vinegar
  • 1 tablespoon finely chopped green onion
  • 2 teaspoons honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  • Using a vegetable peeler, shave zucchini, cucumber and carrot lengthwise into very thin strips.
  • Finely grate enough peel from oranges to measure 2 tablespoons. Cut one orange crosswise in half; squeeze juice from orange to measure 1/2 cup. Reserve peel and juice for vinaigrette. Cut a thin slice from the top and bottom of remaining oranges; stand oranges upright on a cutting board. With a knife, cut off peel and outer membrane from orange. Cut along the membrane of each segment to remove fruit.
  • In a large bowl, combine spinach, orange sections, green onions, walnuts, salt, pepper and, if desired, raisins. Add vegetable ribbons; gently toss to combine. In a small bowl, combine vinaigrette ingredients. Add reserved orange peel and juice; whisk until blended. Drizzle half of the vinaigrette over salad; toss to coat. Serve with remaining vinaigrette.

 

 

 

Fresh peas add a pop of color to this creamy pasta dish. The total time is only 25 minutes, so enjoy this quick and delicious dish! 

Easy-Peasy Shrimp Ziti

Ingredients
1 lb. ziti or rigatoni
3 garlic cloves
1 14.5 oz can crushed tomatoes
2/3 c. half-and-half
1 lb. (31-to 40-ct.) peeled, de-veined shrimp
1 c. frozen peas
deep 12-inch skillet
 
Directions
  1. Bring a pot of water to a boil and cook 1 pound ziti or rigatoni as label directs. While pasta cooks, work on sauce.
  2. Chop 3 garlic cloves. Add to deep 12-inch skillet, with 3 tablespoons olive oil, and cook on medium heat for 3 minutes, stirring.
  3. Add 1 14.5 ounce can crushed tomatoes, and 2/3 cups half-and-half to skillet. Heat to a simmering, then simmer for 2 minutes, stirring.
  4. Add 1 pound peeled, de-veined shrimp, 1 cup frozen peas, 1/4 teaspoon salt, and 1/2 teaspoon black pepper to skillet. Cook until shrimp are cooked, about 5 minutes.
  5. Serve pasta with sauce. Garnish with sliced green onions, if desired.

Pineapple- Chicken Stir-Fry

Garden-fresh veggies and juicy pineapple give this classic stir-fry a seasonal refresh. For an easy substitute, switch the chicken for thinly sliced boneless pork or peeled, de-veined medium shrimp. Serve with brown rice and enjoy! 

Ingredients

1 medium red onion, halved lengthwise and sliced

2 teaspoons vegetable oil

3/4 cup thin, bite size strips zucchini

3/4 cup trimmed fresh pea pods, tips and strings removed

2 teaspoons vegetable oil

2 skinless, boneless chicken breast halves (12 ounces total), cut into thin bite-size strips

1 cup fresh pineapple cubes

3 tablespoons stir-fry sauce (Bottled stir-fry sauce is a handy time-saver. We especially like Kikkoman's preservative-free version flavored with ginger and sesame oil, but any brand will work well in this dish.)

Brown rice (optional)

Fresh pineapple wedges (optional)

 

Directions

1. In a wok or large skillet, heat 2 teaspoons of the oil over medium-high heat. Stir-fry red onion in hot oil for 2 minutes. Add zucchini and pea pods. Stir-fry for 2 minutes more. Remove mixture from wok. 

2. Add the remaining 2 teaspoons of oil to hot wok. Add chicken. Stir-fry for 2 to 3 minutes or until chicken is tender and no longer pink. Return onion mixture to wok. Add pineapple and stir-fry sauce. Cook and stir about 1 minute or until heated through. If desired, serve over brown rice with fresh pineapple wedge. 

Fluffy Key Lime Pie

Ingredients

  • 1/4 cup boiling water
  • 1 package (0.3 ounce) sugar-free lime gelatin
  • 2 cartons (6 ounces each) Key lime yogurt
  • 1 carton (8 ounces) frozen fat-free whipped topping, thawed
  • 1 reduced-fat graham cracker crust (6 ounces)

Directions

  • In a large bowl, add boiling water to gelatin; stir 2 minutes to completely dissolve. Whisk in yogurt. Fold in whipped topping. Pour into crust.
  • Refrigerate, covered, until set, about 2 hours.

 

 Orthodontic Myth Busters

MYTH:

Kids have to wait to get braces until they have all their permanent teeth.

 

FACT:

This is not true! We recommend that children be evaluated around the age of seven, or even younger if they show signs of having a cross or under bite. The earlier we can evaluate, the more likely it is that we can determine a course of treatment that will have a better outcome with positive growth patterns.
