February 1, 1960 - In Greensboro, North Carolina, four African American students sat down and ordered coffee at a lunch counter inside a Woolworth's store. They were refused service, but did not leave. Instead, they waited all day. The scene was repeated over the next few days, with protests spreading to other southern states, resulting in the eventual arrest of over 1,600 persons for participating in sit-ins. February 3, 1870 - The 15th Amendment to the U.S. Constitution was ratified, guaranteeing the right of citizens to vote, regardless of race, color, or previous condition of servitude. February 4, 1861 - Apache Chief Cochise was arrested in Arizona by the U.S. Army for raiding a ranch. Cochise then escaped and declared war, beginning the period known as the Apache Wars, which lasted 25 years. February 6, 1952 - King George VI of England died. Upon his death, his daughter Princess Elizabeth became Queen Elizabeth II, Queen of the United Kingdom of Great Britain and Northern Ireland. February 11th - Celebrated in Japan as the founding date of the Japanese nation, which occurred with the accession to the throne of the first Emperor, Jimmu, in 660 BC. February 13, 1945 - During World War II in Europe, British and American planes began massive bombing raids on Dresden, Germany. A four-day firestorm erupted that was visible for 200 miles and engulfed the historic old city, killing an estimated 135,000 German civilians. February 14th - Celebrated as (Saint) Valentine's Day around the world, now one of the most widely observed unofficial holidays in which romantic greeting cards and gifts are exchanged. February 19, 1942 - Internment of Japanese Americans began after President Franklin Roosevelt issued an Executive Order requiring those living on the Pacific coast to report for relocation. Over 110,000 persons therefore shut down their businesses, sold off their property, quit school and moved inland to the relocation centers. February 21, 1972 - President Richard Nixon arrived in China for historic meetings with Chairman Mao Tse-tung and Premier Chou En-lai. February 23, 1942 - During World War II, the first attack on the U.S. mainland occurred as a Japanese submarine shelled an oil refinery near Santa Barbara, California, causing minor damage. February 28, 1994 - NATO conducted its first combat action in its 45-year history as four Bosnian Serb jets were shot down by American fighters in a no-fly zone.

What Is The Paleo Diet?
You may have heard something about the “Paleo diet” in your daily comings and goings. But do you know what it is? If you do not, we’d like to provide a simple explanation, as many elements of the diet lead to improved intake of highly nutritious foods.

The paleo diet’s philosophy centers around eating foods that are assumed to have been available to Paleolithic humans. As you can imagine, there are many variabilities in what that diet could have been. The basic premise is that the digestive systems of our ancestors evolved to support the foods that were only available at the time, which would have included a diet from foraging and hunting. The philosophy of the paleo diet is that foods that came out of the Neolithic Revolution, or agricultural revolution, which included grains, and thus breads, did not suite a digestive track that took millennia to evolve to suit the diet of paleolithic humans, and is therefore not suitable to healthy digestion and intake of nutrition in modern humans.
Foods that are included in the Paleo diet are all forms of vegetables (including root vegetables), fruit (including fruit oils, e.g., olive oil, coconut oil, and palm oil), nuts, fish, meat, and eggs.
Foods that are excluded include dairy, grain-based foods, legumes, extra sugar, and nutritional products of industry (including refined fats and refined carbohydrates).
While we do not endorse the Paleo diet as the be-all and end-all of healthy eating, we can say that the foods that are included in the diet are definitely on the high nutrient end, and therefore highly advisable to include in your diet for the healthiest lifestyle possible.

 Oils. Salt. Sugar. Images of ancient caravans bringing these precious commodities to wealthy European cities. Recall the previous newsletter where we introduced the three layers of our tear film. These elements are found in microscopic amounts in everyone's tear film. The clear window in front of the eye is called the Cornea. Every cell in our body requires sugar (glucose) to run the engine of cell metabolism. The tears provide such to the cornea; in both the mucus and aqueous (watery) layers. The aqueous layer keeps the eye moist, repels bacteria and sweeps away waste products. The oils are released from 70 some glands that rim the eyelids, directly behind the eyelashes. Microdroplets are released every time we blink, stabilizing the aqueous layer, reducing evaporation.
 This entire microcosm is taken for granted until it doesn't work right. The conditions we label as Dry eye manifest most commonly as fluctuating vision. Numerous experts around the world have developed a variety solutions as we have come to better understand the pathology and physiology of this condition. Through understanding we enhance the quality of life. Simple measures help the vast majority of dry eye sufferers. Ask your eye care provider at the Eye Center for more.
